Fresh Peach Dessert

I'm sorry it has been so long, things have been crazy around here.
{The good kind of crazy!}
I promise to post pictures of our travels/life soon, but in the meantime...

Here is one of my favorite recipes of all time.
It's from my mom, but it probably came from someone in my home ward.



Please excuse the terrible photography, but this is seriously delicious. 

Fresh Peach Dessert:

Boil Together Until Thickened:

1 cup Water
1 cup Orange Juice
2 Tablespoons Corn Starch
3/4 cup Sugar

After mixture boils, add 1 3oz. package of Sugar-Free Peach Jell-O. 
Refrigerate until mixture is cool

Add 4 cups sliced fresh peaches.

Make a graham cracker crust:
2 1/2 cups Graham Cracker Crumbs
6 Tablespoons Powdered Sugar
1/2 cup margarine (or butter), softened

Press half of the crust mixture into the bottom of a 9x13 pan. 
Spread the partially set Jell-O/Peach mixture on top of crust. 

Fold Together: (or beat with a hand mixer, just make sure Cool Whip stays light)
1 8oz. package Cream Cheese, softened
1 12oz. package Cool Whip, thawed
1/2 cup Powdered Sugar

After Jell-O mixture has completely set, spread Cool Whip mixture over the top and cover with the remaining Graham Cracker crust. 

Keep refrigerated. 
Serves ~ 12.
